Description and itinerary setting
Azilal walnuts come from mountain orchards where trees shade terraces and valley settlements. Harvested nuts are hulled, dried and sorted; good handling is visible in a clean shell, sweet kernel and absence of rancid or moldy notes. They belong in much more than a snack bowl: kernels enrich pastries, couscous garnishes, breads and amlou-style spreads, while orchard visits can connect irrigation, altitude and seasonal labor. The product should not be sold as an official indication unless a lot carries the relevant certification. Walnut allergy disclosure is mandatory even in mixed “terroir tasting” trays.

How it is made
- Gather mature fallen or tree-harvested nuts and remove the green hull promptly.
- Wash if the producer method requires it, then dry in a ventilated layer until safe storage moisture is reached.
- Sort out damaged nuts, crack only in clean conditions and package away from heat, light and moisture.
