Amizmiz olive oil belongs to the foothill orchards southwest of Marrakech, where groves meet weekly-market and mountain-road economies. The valuable visitor experience is concrete: fruit maturity, hand or mechanical harvest, time to mill, malaxation temperature, separation and storage all change the oil in the bottle. A tasting should use clean blue or dark glasses and compare aroma, bitterness and pepper without promising medicinal effects. Decorative “Atlas oil” labels without traceable milling do not qualify as Amizmiz-origin offers.

How it is made

  1. Harvest sound olives from a traceable grove and transport them in ventilated crates without prolonged storage.
  2. Clean, crush and malax under the mill’s recorded temperature-time controls, then separate oil from water and solids.
  3. Filter or settle as declared, test the lot, and store in sealed light-protective containers with harvest date.
