Description and itinerary setting

Zabane is an airy almond nougat associated with Moroccan Jewish Mimouna tables. Egg whites are whipped while a hot sugar or honey syrup is brought to the right stage, then the two are combined into a glossy mass and finished with nuts. It differs from sesame brittle and molded marzipan: the pleasure is lightness, stretch and the contrast of soft foam with toasted almond. Since syrup temperature, raw egg handling and humidity all affect safety and texture, it is better offered by an experienced confectioner or as a demonstration with guests outside the hot-syrup zone. The cultural setting matters: zabane sits among the pale, sweet foods of post-Passover hospitality, where abundance and welcome are expressed through the whole table.

Ingredients and raw materials

Core

  • egg whites
  • sugar or honey syrup
  • almonds

Optional or maker-specific

  • lemon juice
  • vanilla
  • orange blossom water
  • pistachios

How it is made

  1. Toast and cool the nuts; prepare a clean heatproof bowl and whipping equipment.
  2. Cook sugar or honey syrup to the maker’s tested nougat stage while beginning to whip the egg whites.
  3. Stream hot syrup safely into the whites, beat until thick and glossy, fold in nuts and portion before setting.

Cultural accounts

Studies of Mimouna foodways identify zabane among the celebration’s characteristic sweets. Its light color and sweetness fit a table that traditionally emphasizes hopeful, abundant foods after Passover.
