Safi capers are the unopened flower buds of the caper bush, harvested by hand and preserved because the raw bud is sharply bitter. Small buds are sorted, then cured in brine, salt or vinegar until their flavor becomes bright, saline and gently mustard-like. Safi’s dry Atlantic hinterland is widely associated with caper cultivation and processing, making the product a useful bridge between farm, cannery, market and restaurant. Tastings should compare rinsed brined capers with salt-cured ones and explain their use in salads, fish sauces and tagines.
