Rziza is a hand-threaded laminated pancake whose fine strands coil into a round resembling a woven turban. ” Flour, water and salt form an elastic dough; the maker draws it into hair-thin ribbons, winds them around the hand, flattens the coil and cooks it in butter and oil. Warm rziza can be served with honey for breakfast, yet it also absorbs the lentil-and-chicken sauce of winter rfissa. That double life makes it commercially useful as both a bakery item and a culinary technique class.
