Rabat-Sale-Kenitra: meeting the makers

This educational activity starts with objects, not ruins. At the Museum of History and Civilizations, participants choose a small number of materials—bronze, ceramic, marble, coin or inscription—and record what each can and cannot reveal. A second, separately ticketed Chellah visit then asks how excavated fragments, architecture and landscape change the interpretation.

Rabat is the capital that doesn't shout about it — a clean, tree-lined, Atlantic-facing city where the 12th-century Kasbah of the Oudayas watches the river meet the sea, and the Hassan Tower has stood unfinished since 1199, its columns ringing the square like a sentence stopped mid-breath.

Kaak Rbati is Rabat’s almond-centered interpretation of the kaak family. Culinary references distinguish it from dry anise rings by its almond-paste component, which can appear as a filling or define the biscuit’s richer texture. A careful maker balances ground almond, sugar and floral or citrus perfume against a thin wheat shell, then shapes a ring or another attributed Rabati form and bakes it without drying the center.
