Description and itinerary setting

Kaak Mesfioui is Safi’s own member of Morocco’s ring-biscuit family, made for a clean snap and aromatic finish beside tea. Recipes vary, but local versions are commonly treated as dry biscuits rather than the softer eastern kaak Oujdi. Flour is worked with sugar, oil or butter and a bakery-specific perfume—often anise, sesame, citrus or floral water—then shaped into small rings and baked dry enough to keep.

Ingredients and raw materials

Core

  • wheat flour
  • sugar
  • oil or butter
  • salt

Optional or maker-specific

  • anise
  • sesame
  • orange zest
  • orange blossom water
  • eggs

How it is made

  1. Mix the bakery’s declared dry aromatics with flour and sugar, then rub or knead in the chosen fat.
  2. Add only enough liquid to shape a firm dough; form uniform small rings and decorate if traditional to the maker.
  3. Bake through to the stated crispness, cool completely and pack in a moisture-resistant container.

Cultural accounts

Reference lists of Moroccan kaak identify a distinct mesfioui variety from Safi. The documentation supports the locality and biscuit family, while each bakery must supply its exact formula.
