Dafina, also called skhina, is a Moroccan Jewish Sabbath stew whose character comes from time rather than last-minute flourish. A tightly covered pot holds beef, chickpeas, potatoes, wheat or rice and whole eggs; household versions may add dates, sweet potato or a seasoned meat parcel. It begins cooking before Shabbat and stays at low heat so that the grains swell, the eggs bronze and the sauce concentrates without further kitchen work. For travelers, this is best presented through a documented heritage meal or cooking demonstration, never as a single fixed “authentic” formula. How it is made

  1. Soak chickpeas and, where used, wheat; brown or season the meat and arrange the dense ingredients in a heavy pot.
  2. Nestle scrubbed whole eggs and potatoes into the pot, add spices and enough water for a long covered simmer.
  3. Bring to heat before the Sabbath, seal or tightly cover, then hold at very low heat overnight under food-safe controlled conditions.
  4. Open at service, separate grains and eggs if the household custom requires it, and serve the components with their concentrated broth.
